- 1 cup quinoa, rinsed and cooked

- Fresh lemon juice

- Feta cheese (optional)
Instructions:
- Toss the diced vegetables in olive oil, salt, and pepper. Roast them in the oven until tender and slightly caramelized.
- In a large bowl, combine the cooked quinoa and roasted vegetables.
- Drizzle with fresh lemon juice and garnish with fresh herbs and crumbled feta cheese if desired. Serve warm or at room temperature.
